Yellowfin Tuna
Pelagic fish w/ dark red meat and a mild flavour. Served medium rare

Mangrove Jack
Firm and flaky sweet tasting local fish caught in estuaries and open water

Mahi Mahi
A meaty, firm pelagic fish w/ a mild sweet flavour

Flame Snapper
Deep depth reef fish w/ Firm meaty flesh caught on the Great Barrier Reef

South Australian salt water crustacean. Firm, white and tasty flesh

Crystal Crabs - 1.5kg
West Australian white crab caught at a depth of 1000m in cold water. Very sweet and moist

Mud Crab - 1.2kg
Tropical water crustacean considered the best crab species for eating. Moist, flaky & sweet
